The right private dining setup depends on the size of the guest list and the kind of moment you want to create. A birthday might call for a sharing platter in the middle of the table, while an anniversary might call for a paced tasting menu. The Manor, at Amara Singapore in Tanjong Pagar, offers two private suites and a large dining hall, and the ideas below show how to use each one.
| Space | Capacity | Character |
| Crimson Suite | Up to 16 guests | Victorian charm, private screens |
| Emerald Suite | Up to 20 guests | Jewel-toned and sophisticated, private screens |
| Main dining hall | Over 140 guests | Victorian-inspired detailing and refined décor |
All three sit within more than 4,000 square feet designed around the idea of a timeless estate. For a smaller group of up to 16, the Crimson Suite is the closer fit. For up to 20, the Emerald Suite has the extra room. For a larger party, the main dining hall is the space built for numbers.
Put a one-metre platter at the centre. The one-metre sharing platter brings together flame-grilled kebabs, handcrafted mezze and fragrant rice, in vegetarian and non-vegetarian versions, and is described as crafted for celebrations. It is available only during Friday Reverie and Saturday Soirée, the After Dark evenings, so a birthday planned for a Friday or Saturday night can be built around it.
Open with a cocktail toast. At The Manor, the bar has a mixology theatre where cocktails are crafted as performances. Every dish on the food menu also lists a suggested wine and a suggested cocktail, which makes it easy to choose drinks that match what is on the table.
Share a platter for a smaller table. The kebab platters on the menu are priced for two or four guests. The vegetarian Garden of Embers Platter is $68 for two or $98 for four. The Imperial Fire Tasting Platter, with chicken, mutton, prawns and fish, is $98 for two or $128 for four.
Finish with dessert. Eight desserts are listed at $20 each: Arabian Mahalabia Cream, Palm Jaggery Caramel Payasam, Festive Vermicelli Kheer, Winter Carrot Confit, Saffron Velvet Phirni, Rose Syrup Jamun Soufflé, Rasmalai Darbar Royale and Crème de Kulfi. A few different desserts for the table make a natural birthday finale.
Choose a tasting menu for a paced evening. The Chef and Sommelier Signature Tasting Menus are seven courses each, at $138 per person for the vegetarian menu and $168 per person for the non-vegetarian menu. The vegetarian menu includes an Awadhi galouti duo and ends with a Caramel Palm Jaggery Payasam. The non-vegetarian menu includes a Lucknowi Kakori Silk Kebab and Moilee of Kerala Shores. The menu asks guests to check with the sommelier about charges for wine and cocktail pairing.
Pick a pairing that means something. Each dish carries its own pairing suggestion. The Moilee of Kerala Shores, for example, is paired with a Spanish Albariño and a cocktail called Toddy Tapper.
Use a suite for a larger anniversary. For a family or friends’ anniversary of up to 16 or 20 guests, the Crimson Suite or Emerald Suite gives the group a private room with private screens.
End with paan. The dessert menu closes with Banarasi paan, a mouth freshener of gulkand rose preserve and fragrant fennel seeds at $7, and a chocolate paan with rose petal jam, candied fruits and fennel seeds at $10.
The menu is organised by region, so a table can share dishes from both the South Indian and North Indian sections. Dishes are marked as vegetarian, chicken, mutton, fish or prawns, which helps when guests eat differently. Menu prices are listed before service charge and government taxes, so budget for the final bill and not the headline figure.
A birthday or anniversary is easier to enjoy when the details are settled early. Decide on the room, the menu and the drinks, then reach out to The Manor well ahead of the date so the evening can be planned around your guests.
